Healthy vegetarian Caesar salad (adapted from The Detox Cookbook, Woman’s Weekly)
1 slice wholemeal bread 1 teaspoon olive oil 1/2 clove garlic crushed 170g asparagus 2 handfuls Spinach leaves 1 egg 1 sanitarium “bacon” rash
Dressing: 1/2 clove garlic crushed 1 teaspoon american mustard 2 teaspoons natural yoghurt 1 tablespoon water
- Cut bread into cubes. Combine oil & garlic in a small bowl. Toss bread to coat in oil, place in single layer and grill both sides until toasted.
- Meanwhile, hard boil egg while also steaming asparagus on top of pan.
- Shake dressing ingredients in screw top jar.
- Slice egg and place all ingredients in a bowl and drizzle with dressing.
Serves 1.
